- 1/2 cup vegetable oil
- 2 tsp vanilla extract
- 1 cup boiling water
- 1 cup semi-sweet chocolate chips
Instructions
- Preheat your oven to 350°F (175°C) and line a cupcake pan with your favorite cupcake liners.
- Sift together the flour, sugar, cocoa powder, baking powder, baking soda, and salt in a large mixing bowl.
- Add the eggs, milk, oil, and vanilla to the dry ingredients and beat on medium speed for about 2 minutes.
- Gradually stir in the boiling water until well combined.
- Fold in the semi-sweet chocolate chips.
- Pour the batter into the cupcake liners, filling them about two-thirds full.
- Bake in the preheated oven for 18-20 minutes.
- Allow the cupcakes to cool completely on a wire rack before frosting.
