  • 1/3 cup vegetable oil
  • 3 large eggs
  • 1 cup mixed berries (strawberries, blueberries, raspberries)
  • 1/2 cup lemon juice
  • 1 cup powdered sugar
  • 2 tablespoons lemon zest
  • Whipped cream for topping
  • Fresh berries for garnish

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare your baking pan by greasing and flouring it.
  2. Combine the lemon cake mix, water, vegetable oil, and eggs in a mixing bowl, using an electric mixer on medium speed until smooth.
  3. Fold in the mixed berries and lemon juice using a spatula.
  4. Pour the batter into the prepared baking pan and smooth the top.
  5. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  6. Mix the powdered sugar with lemon zest and lemon juice to create a glaze once cooled, and drizzle it over the cake.
  7. Add a generous dollop of whipped cream on top and garnish with fresh berries before serving.

Notes

For added richness, substitute vegetable oil with melted butter. Consider using an air fryer for a quicker bake.
