- 4 large bell peppers
- 1 pound chicken breast, cooked and shredded
- 1 cup cooked rice
- 1 cup pineapple chunks
- 1/2 cup teriyaki sauce
- Salt and pepper to taste

Instructions
- Preheat the oven to 375°F (190°C).
- Prepare the bell peppers: Cut the tops off and remove the seeds and ribs.
- Make the filling: In a mixing bowl, combine chicken, rice, pineapple, teriyaki sauce, salt, and pepper.
- Stuff the peppers with the mixture, pressing it down lightly.
- Arrange the stuffed peppers in a baking dish and drizzle with any remaining teriyaki sauce.
- Cover the dish with foil and bake for 25-30 minutes.
- Finish baking by removing the foil and baking for an additional 10 minutes.
- Serve warm and garnish with green onions if desired.
