  • 1 pound chicken breast, cooked and shredded
  • 1 cup cooked rice
  • 1 cup pineapple chunks
  • 1/2 cup teriyaki sauce
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Prepare the bell peppers: Cut the tops off and remove the seeds and ribs.
  3. Make the filling: In a mixing bowl, combine chicken, rice, pineapple, teriyaki sauce, salt, and pepper.
  4. Stuff the peppers with the mixture, pressing it down lightly.
  5. Arrange the stuffed peppers in a baking dish and drizzle with any remaining teriyaki sauce.
  6. Cover the dish with foil and bake for 25-30 minutes.
  7. Finish baking by removing the foil and baking for an additional 10 minutes.
  8. Serve warm and garnish with green onions if desired.
