Description

Ingredients

  • 1 cup fresh strawberries, pureed
  • 1/2 cup unsalted butter, softened
  • 1 cup sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened butter and sugar until light and fluffy, about 2-3 minutes.
  3. Add the egg and vanilla extract, mixing well until fully combined.
  4. Stir in the pureed strawberries.
  5. Whisk together the flour, baking soda, and salt in another bowl.
  6. Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
  7. Drop spoonfuls of dough onto a baking sheet lined with parchment paper, spacing them at least 2 inches apart.
  8. Bake for 12-15 minutes, or until the edges are lightly golden.
  9. Allow cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

For vegan or gluten-free versions, consider using flax eggs and almond flour as substitutes.
