- 1 ripe pineapple, diced
- 2 fresh jalapeños, finely chopped
- 1/2 cup red onion, finely chopped
- 1/4 cup brown sugar
- 1/2 cup apple cider vinegar
- 1 teaspoon garlic, minced
- Salt to taste
- Juice of 1 lime
Instructions
- Combine the diced pineapple, chopped jalapeños, red onion, brown sugar, apple cider vinegar, minced garlic, and lime juice in a medium saucepan and stir gently.
- Place the saucepan over medium heat, stirring occasionally until it simmers.
- Lower the heat and let the chutney cook for about 15-20 minutes, stirring occasionally.
- Taste the chutney and season with salt as desired.
- Remove from heat and allow to cool slightly before serving.
