Ingredients

  • 1 ripe pineapple, diced
  • 2 fresh jalapeños, finely chopped
  • 1/2 cup red onion, finely chopped
  • 1/4 cup brown sugar
  • 1/2 cup apple cider vinegar
  • 1 teaspoon garlic, minced
  • Salt to taste
  • Juice of 1 lime

Instructions

  1. Combine the diced pineapple, chopped jalapeños, red onion, brown sugar, apple cider vinegar, minced garlic, and lime juice in a medium saucepan and stir gently.
  2. Place the saucepan over medium heat, stirring occasionally until it simmers.
  3. Lower the heat and let the chutney cook for about 15-20 minutes, stirring occasionally.
  4. Taste the chutney and season with salt as desired.
  5. Remove from heat and allow to cool slightly before serving.

Notes

This chutney can be made ahead of time and stored in the fridge for up to two weeks.
