- 2 cups sourdough discard
- 3 cups all-purpose flour
- 1 packet (2 1/4 tsp) active dry yeast
- 1 teaspoon salt
- 1 tablespoon sugar
- 1/2 cup warm water
- 1/2 cup melted butter
- 4 cloves garlic, minced
- 1 cup shredded mozzarella cheese
- 1 tablespoon chopped parsley
Instructions
- Activate the yeast: In a bowl, mix the warm water and sugar, stirring gently to combine. Sprinkle the yeast over the top and let it sit for about 5 minutes until frothy.
- Combine ingredients: In a large mixing bowl, blend the sourdough discard, all-purpose flour, and salt. Once combined, pour in the frothy yeast mixture. Mix until you have a shaggy dough.
- Knead the dough: Turn the dough onto a floured surface and knead for about 10 minutes until smooth and elastic.
- First rise: Place the kneaded dough in a greased bowl, cover it with a towel, and let it rise in a warm spot for about 60 minutes or until doubled.
- Preheat oven: Preheat your oven to 350°F (175°C).
- Mix garlic butter: In a small bowl, combine melted butter with minced garlic.
- Shape the dough: Once the dough has risen, punch it down gently to release air. Divide the dough into small pieces, dip each piece into the garlic butter.
- Stack in loaf pan: Grease a loaf pan and stack the butter-coated dough pieces inside it, alternating layers with mozzarella cheese and chopped parsley.
- Second rise: Cover the loaf pan with a towel and let it rise again for about 30 minutes.
- Bake: Place the loaf in the preheated oven and bake for 25-30 minutes until golden brown.
- Cool and serve: Remove from oven and allow it to cool slightly before pulling apart.
