Ingredients

  • 1 can of black beans, drained and rinsed
  • 1 can of kidney beans, drained and rinsed
  • 1 can of chickpeas, drained and rinsed
  • 1 can of green beans, drained
  • 1 can of wax beans, drained
  • 1/4 cup of red onion, diced
  • 1/4 cup of bell pepper, diced
  • 1/4 cup of olive oil
  • 2 tablespoons of apple cider vinegar
  • 1 tablespoon of honey or sugar
  • Salt and pepper to taste

Instructions

  1. Combine the black beans, kidney beans, chickpeas, green beans, wax beans, red onion, and bell pepper in a large bowl.
  2. Whisk together the olive oil, apple cider vinegar, honey, salt, and pepper in a separate small bowl until smooth and slightly thickened.
  3. Pour the vinaigrette over the bean mixture and toss gently to combine.
  4. Allow to chill in the refrigerator for at least 30 minutes before serving.
