Instructions
- Preheat the oven to 400°F (200°C).
- Toss the diced pumpkin with olive oil, cumin, paprika, salt, and pepper.
- Spread the pumpkin on a baking sheet and roast for 25-30 minutes until tender.
- In a large bowl, combine the roasted pumpkin, chickpeas, and mixed greens.
- Drizzle with balsamic vinegar and toss gently to combine.
