Ingredients

  • 2 cups fresh rhubarb, chopped
  • 1 cup granulated sugar
  • 3 tablespoons cornstarch
  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, melted
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup milk
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and grease your 9×13 inch baking dish while the oven warms up.
  2. Combine the chopped rhubarb, 1 cup sugar, and cornstarch in a medium bowl. Toss until well-coated, and set aside.
  3. Mix together the flour, melted butter, 1/2 cup sugar, beaten egg, and vanilla extract in another bowl until a soft dough forms.
  4. Press the dough evenly into the bottom of your greased baking dish.
  5. Pour the rhubarb mixture evenly over the crust.
  6. Whisk together the milk and salt in the same bowl until combined, then gently pour it over the rhubarb.
  7. Bake for 35-40 minutes, or until the edges turn golden brown and the center is just set.
  8. Allow the bars to cool completely before cutting into squares and serving.
