- 2 cups fresh rhubarb, chopped
- 1 cup granulated sugar
- 3 tablespoons cornstarch
- 1 cup all-purpose flour
- 1/2 cup unsalted butter, melted
- 1/2 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup milk
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C) and grease your 9×13 inch baking dish while the oven warms up.
- Combine the chopped rhubarb, 1 cup sugar, and cornstarch in a medium bowl. Toss until well-coated, and set aside.
- Mix together the flour, melted butter, 1/2 cup sugar, beaten egg, and vanilla extract in another bowl until a soft dough forms.
- Press the dough evenly into the bottom of your greased baking dish.
- Pour the rhubarb mixture evenly over the crust.
- Whisk together the milk and salt in the same bowl until combined, then gently pour it over the rhubarb.
- Bake for 35-40 minutes, or until the edges turn golden brown and the center is just set.
- Allow the bars to cool completely before cutting into squares and serving.
Notes
These bars can be prepared a day in advance and stored in the refrigerator. Enjoy warm or chilled.
