  • 1/4 cup granulated sugar (for crumb topping)
  • 1/4 cup all-purpose flour (for crumb topping)
  • 2 tablespoons unsalted butter, melted (for crumb topping)

Instructions

  1. Preheat the oven to 350°F (175°C) and line your muffin tin with paper liners.
  2. Combine the flour, granulated sugar, baking powder, baking soda, salt, and cocoa powder in a large mixing bowl.
  3. Whisk together the vegetable oil, buttermilk, eggs, vanilla extract, and red food coloring in a separate bowl.
  4. Pour the wet ingredients into the dry mixture, combining gently until just incorporated.
  5. Beat the softened cream cheese and powdered sugar until smooth in another bowl.
  6. Fill the muffin cups halfway with muffin batter, add a dollop of cream cheese mixture, and top with remaining batter.
  7. Swirl gently with a toothpick or small knife.
  8. Mix topping ingredients until crumbly and sprinkle over each muffin.
  9. Bake for 18–20 minutes until a toothpick comes out clean.
