Instructions

  1. Preheat the oven: Set your oven to 350°F (175°C). Line a jelly roll pan with parchment paper.
  2. Beat the eggs: In a large mixing bowl, add the eggs, sugar, and vanilla. Beat with an electric mixer until fluffy and pale, about 3–4 minutes.
  3. Combine the dry ingredients: Sift together the flour, cocoa powder, baking powder, and salt in another bowl.
  4. Fold in the dry ingredients: Gently fold the sifted dry ingredients into the egg mixture with a rubber spatula.
  5. Pour the batter: Transfer the batter into your prepared pan, spreading evenly.
  6. Bake: Place the pan in the oven for 12-15 minutes or until the cake springs back when pressed.
  7. Roll the cake: Remove it from the oven, invert onto a powdered sugar-dusted kitchen towel and roll it up with the towel. Let cool completely.
  8. Make the filling: Whip the cream with powdered sugar until soft peaks form, then gently fold in the raspberries.
  9. Assemble: Unroll the cooled cake, spread the filling over it, and roll it back up without the towel.
  10. Chill and garnish: Refrigerate for at least an hour, slice, and garnish with chocolate shavings.
