Juicy pork meatballs served on creamy sweet potato mash with a rich bourbon-maple sauce.

- 1 lb ground pork
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 egg
- 2 cloves garlic, minced
- 1 tsp salt
- 1/2 tsp black pepper
- 2 large sweet potatoes, peeled and chopped
- 1/4 cup butter
- 1/4 cup milk
- 1/4 cup bourbon
- 1/4 cup maple syrup
- 1 tbsp soy sauce
Instructions
- Preheat your oven to 400°F (200°C).
- Combine the ground pork, breadcrumbs, grated Parmesan, egg, minced garlic, salt, and black pepper in a large mixing bowl.
- Shape the mixture into meatballs, about the size of a golf ball, and place on a lined baking sheet.
- Bake for 20-25 minutes until golden brown.
- Cook the chopped sweet potatoes in boiling salted water until tender, about 15-20 minutes.
- Drain the sweet potatoes, then mash with butter and milk.
- Combine the bourbon, maple syrup, and soy sauce in a saucepan and simmer for about 5 minutes.
- Serve the meatballs over the sweet potato mash and drizzle with the bourbon-maple sauce.
Notes
You can make the meatball mixture a day in advance and refrigerate it. For a crispier exterior, use an air fryer instead of an oven.
