Juicy pork meatballs served on creamy sweet potato mash with a rich bourbon-maple sauce.


Ingredients

  • 1 lb ground pork
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 large sweet potatoes, peeled and chopped
  • 1/4 cup butter
  • 1/4 cup milk
  • 1/4 cup bourbon
  • 1/4 cup maple syrup
  • 1 tbsp soy sauce

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Combine the ground pork, breadcrumbs, grated Parmesan, egg, minced garlic, salt, and black pepper in a large mixing bowl.
  3. Shape the mixture into meatballs, about the size of a golf ball, and place on a lined baking sheet.
  4. Bake for 20-25 minutes until golden brown.
  5. Cook the chopped sweet potatoes in boiling salted water until tender, about 15-20 minutes.
  6. Drain the sweet potatoes, then mash with butter and milk.
  7. Combine the bourbon, maple syrup, and soy sauce in a saucepan and simmer for about 5 minutes.
  8. Serve the meatballs over the sweet potato mash and drizzle with the bourbon-maple sauce.

Notes

You can make the meatball mixture a day in advance and refrigerate it. For a crispier exterior, use an air fryer instead of an oven.
