Ingredients

  • 1 lb chicken breast, cut into bite-sized pieces
  • 1 cup broccoli florets
  • 1 cup bell peppers, sliced
  • 1 cup carrots, sliced
  • 1/4 cup orange juice
  • 2 tbsp soy sauce
  • 1 tbsp ginger, minced
  • 2 tbsp honey
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Mix together orange juice, soy sauce, ginger, honey, garlic, salt, and pepper in a large bowl.
  3. Add the chicken to the marinade and coat well.
  4. Spread the chicken and arrange the broccoli, bell peppers, and carrots on a sheet pan.
  5. Drizzle olive oil over the vegetables and season with salt and pepper.
  6. Roast in the oven for 20-25 minutes until the chicken is cooked through and the veggies are tender.
