Description

Ingredients

  • 1 lb ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) diced tomatoes
  • 2 cups beef broth
  • 1 cup elbow macaroni
  • 2 tbsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)

Instructions

  1. In a large pot, brown the ground beef over medium heat.
  2. Add the chopped onion and minced garlic, cooking until the onion is translucent.
  3. Stir in the kidney beans, diced tomatoes, beef broth, elbow macaroni, chili powder, cumin, salt, and pepper.
  4. Bring the mixture to a boil, then reduce heat and simmer for about 15-20 minutes, or until the macaroni is cooked.
  5. If desired, stir in shredded cheese until melted before serving.
