- 1 cup rolled oats
- 1/2 cup all-purpose flour
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 1/2 cup raisins
- 1/2 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 1 egg
Instructions
- Preheat your oven to 350°F (175°C) and line a square baking dish with parchment paper.
- Cream the softened butter with brown and granulated sugars until light and fluffy, about 3-4 minutes.
- Beat in the egg and vanilla extract until smooth and glossy.
- Whisk together rolled oats, flour, baking soda, cinnamon, and salt in a separate bowl.
- Gradually add the dry mixture to the wet mixture, stirring until just combined.
- Fold in the raisins until evenly distributed.
- Spread the batter evenly in the prepared baking dish.
- Bake for 20-25 minutes, or until golden brown and a toothpick comes out clean.
- Allow to cool for at least 15 minutes before cutting into bars.
Notes
You can prepare the batter in advance and refrigerate for up to 24 hours. Bake in an air fryer at 325°F (160°C) for a quicker option.
