- 1 large egg

- 1 cup raisins
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×9 inch baking pan with butter or line it with parchment paper.
- Mix together the rolled oats, all-purpose flour, brown sugar, granulated sugar, baking soda, cinnamon, and salt in a large bowl.
- Cream the softened butter and both sugars together until light and fluffy, about 2-3 minutes.
- Whisk in the egg and vanilla extract until well combined.
- Fold the wet mix into the dry ingredients, mixing until no dry flour remains.
- Stir in the raisins, distributing them evenly throughout the mixture.
- Pour the batter into the prepared pan, spreading it into an even layer.
- Bake for 25-30 minutes, or until golden brown and firm to the touch.
- Cool in the pan for 10 minutes before transferring to a cooling rack. Cut into squares.
Notes
For a dairy-free version, replace butter with coconut oil. You can customize by adding chocolate chips or nuts.
