  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup raisins

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×9 inch baking pan with butter or line it with parchment paper.
  2. Mix together the rolled oats, all-purpose flour, brown sugar, granulated sugar, baking soda, cinnamon, and salt in a large bowl.
  3. Cream the softened butter and both sugars together until light and fluffy, about 2-3 minutes.
  4. Whisk in the egg and vanilla extract until well combined.
  5. Fold the wet mix into the dry ingredients, mixing until no dry flour remains.
  6. Stir in the raisins, distributing them evenly throughout the mixture.
  7. Pour the batter into the prepared pan, spreading it into an even layer.
  8. Bake for 25-30 minutes, or until golden brown and firm to the touch.
  9. Cool in the pan for 10 minutes before transferring to a cooling rack. Cut into squares.

Notes

For a dairy-free version, replace butter with coconut oil. You can customize by adding chocolate chips or nuts.
