Instructions
- Combine crushed graham crackers, shredded coconut, melted butter, caramel sauce, vanilla extract, and salt in a mixing bowl.
- Scoop the mixture and form bite-sized balls, about 1 inch in diameter.
- Line a baking sheet with parchment paper and place the cookie bites, ensuring space between each.
- Melt the chocolate chips in a microwave-safe bowl or double boiler, stirring until smooth.
- Dip each cookie bite in the melted chocolate, allowing excess to drip off.
- Drizzle additional caramel sauce over the chocolate-coated bites, if desired.
- Refrigerate for about 30 minutes until chocolate sets.
