Description

A delightful Mexican Tater Tot Casserole that combines crispy tater tots with seasoned meat, cheese, black beans, and corn for a comforting and flavorful dish.


Ingredients

  • 1 bag of tater tots
  • 1 lb ground beef or turkey
  • 1 can black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 packet taco seasoning
  • 1 cup salsa
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 1/2 cup sour cream
  • Chopped green onions for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Brown the ground beef or turkey in a large skillet over medium heat until no longer pink, about 5–7 minutes.
  3. Stir in the taco seasoning, black beans, corn, and salsa; cook for an additional 2-3 minutes.
  4. Grease a 9×13 inch baking dish and spread the meat mixture evenly across the bottom.
  5. Top the meat with tater tots, aligning them in neat rows.
  6. Sprinkle shredded cheese generously over the tater tots.
  7. Bake for 25-30 minutes, or until the tater tots are golden brown and the cheese bubbles.
  8. Cool slightly before serving. Serve with a dollop of sour cream and sprinkle green onions on top.

Notes

You can make this casserole vegetarian by using lentils or plant-based meat alternatives instead of ground meat.
