- 1 bag of tater tots
- 1 lb ground beef or turkey
- 1 can black beans, drained and rinsed
- 1 cup corn kernels
- 1 packet taco seasoning
- 1 cup salsa
- 2 cups shredded cheese (cheddar or Mexican blend)
- 1/2 cup sour cream
- Chopped green onions for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- Brown the ground beef or turkey in a large skillet over medium heat until no longer pink, about 5–7 minutes.
- Stir in the taco seasoning, black beans, corn, and salsa; cook for an additional 2-3 minutes.
- Grease a 9×13 inch baking dish and spread the meat mixture evenly across the bottom.
- Top the meat with tater tots, aligning them in neat rows.
- Sprinkle shredded cheese generously over the tater tots.
- Bake for 25-30 minutes, or until the tater tots are golden brown and the cheese bubbles.
- Cool slightly before serving. Serve with a dollop of sour cream and sprinkle green onions on top.
Notes
You can make this casserole vegetarian by using lentils or plant-based meat alternatives instead of ground meat.
