Description

A vibrant Mediterranean White Bean Salad with creamy cannellini beans, fresh cherry tomatoes, crunchy cucumber, and zesty red onion, drizzled with a bright lemon dressing.


Ingredients

  • 1 can white beans (cannellini or great northern), rinsed and drained
  • 1 cup cherry tomatoes, halved
  • 1/2 cucumber, diced
  • 1/4 red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste
  • Optional toppings: Feta cheese, crumbled olives, or sundried tomatoes

Instructions

  1. In a large bowl, combine the rinsed white beans, halved cherry tomatoes, diced cucumber, finely chopped red onion, and chopped parsley. Gently mix them together.
  2. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper until the mixture is fully emulsified.
  3. Pour the dressing over the salad mixture and gently toss to combine.
  4. Optionally, sprinkle crumbled feta cheese and olives on top before serving.
  5. Serve chilled or at room temperature.
