- 1 can white beans (cannellini or great northern), rinsed and drained
- 1 cup cherry tomatoes, halved
- 1/2 cucumber, diced
- 1/4 red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
- Optional toppings: Feta cheese, crumbled olives, or sundried tomatoes
Instructions
- In a large bowl, combine the rinsed white beans, halved cherry tomatoes, diced cucumber, finely chopped red onion, and chopped parsley. Gently mix them together.
- In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper until the mixture is fully emulsified.
- Pour the dressing over the salad mixture and gently toss to combine.
- Optionally, sprinkle crumbled feta cheese and olives on top before serving.
- Serve chilled or at room temperature.
