Description

Delightful Mango Butter Bars with a buttery crust and creamy mango filling, perfect for summer gatherings.


Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup powdered sugar
  • 1 cup unsalted butter, softened
  • 1/2 teaspoon salt
  • 2 cups fresh mango, diced
  • 1 tablespoon lemon juice
  • 1/2 cup granulated sugar
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×9 inch baking pan with cooking spray or butter.
  2. Combine the flour, powdered sugar, softened butter, and salt in a mixing bowl until it resembles coarse crumbs.
  3. Press half of the crumb mixture firmly into the bottom of your prepared baking pan.
  4. Mix the diced mango, lemon juice, granulated sugar, and vanilla extract in another bowl, then spoon it over the crust.
  5. Sprinkle the remaining crumb mixture on top of the mango layer.
  6. Bake for 25-30 minutes until golden brown and a toothpick inserted comes out clean.
  7. Cool completely in the pan before cutting into squares.

Notes

Store in an airtight container in the refrigerator for up to a week. Can be frozen for up to three months.
