- 2 cups all-purpose flour
- 1/2 cup powdered sugar
- 1 cup unsalted butter, softened
- 1/2 teaspoon salt
- 2 cups fresh mango, diced
- 1 tablespoon lemon juice
- 1/2 cup granulated sugar
- 1/2 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×9 inch baking pan with cooking spray or butter.
- Combine the flour, powdered sugar, softened butter, and salt in a mixing bowl until it resembles coarse crumbs.
- Press half of the crumb mixture firmly into the bottom of your prepared baking pan.
- Mix the diced mango, lemon juice, granulated sugar, and vanilla extract in another bowl, then spoon it over the crust.
- Sprinkle the remaining crumb mixture on top of the mango layer.
- Bake for 25-30 minutes until golden brown and a toothpick inserted comes out clean.
- Cool completely in the pan before cutting into squares.
Notes
Store in an airtight container in the refrigerator for up to a week. Can be frozen for up to three months.
