- 4 medium potatoes, thinly sliced
- 1 cup shredded cheddar cheese
- 1 cup sour cream
- 1 can cream of mushroom soup
- 1 onion, chopped
- Salt and pepper to taste
- 1 tablespoon olive oil
Instructions
- Preheat your oven to 350°F (175°C).
- Heat olive oil in a skillet over medium heat and add the chopped onion, cooking until translucent.
- Add the ground beef and cook until browned, seasoning with salt and pepper.
- Mix the sour cream and cream of mushroom soup in a bowl until smooth.
- Layer half of the sliced potatoes in a greased baking dish.
- Spread the beef mixture over the potatoes and drizzle with half of the soup mixture.
- Repeat the layers with the remaining potatoes and soup mixture.
- Top with shredded cheddar cheese.
- Cover with aluminum foil and bake for 1 hour.
- Remove the foil and bake for an additional 15 minutes until the cheese is golden and bubbly.
- Let it cool for a few minutes before serving.
