Description

Ingredients

  • Kataifi pastry: 200 grams, thawed
  • Pistachios: 100 grams, finely chopped
  • Ricotta cheese: 250 grams
  • Powdered sugar: 50 grams
  • Butter: 100 grams, melted
  • Honey: 2 tablespoons
  • Vanilla extract: 1 teaspoon
  • Water: 1 cup (for syrup)
  • Granulated sugar: 1 cup (for syrup)
  • Lemon juice: 1 tablespoon (for syrup)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix ricotta cheese, powdered sugar, chopped pistachios, honey, and vanilla extract until well combined.
  3. Take a handful of kataifi pastry and spread it out on a clean surface.
  4. Place a tablespoon of the filling at one end of the kataifi and roll it tightly to form a cylinder.
  5. Brush the rolled kataifi with melted butter and place it seam-side down on a baking sheet.
  6. Repeat until all the filling is used, then bake for 25-30 minutes or until golden brown.
  7. While the rolls are baking, prepare the syrup by combining water, granulated sugar, and lemon juice in a saucepan. Bring to a boil, then simmer for 10 minutes.
  8. Once the kataifi rolls are golden, remove them from the oven and immediately drizzle the syrup over them.
  9. Let them cool slightly before serving to allow the syrup to soak in.
