- 2 boneless, skinless chicken breasts
- 1 cup mushrooms, sliced
- 1 medium zucchini, sliced
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Heat 2 tablespoons of olive oil in a large skillet over medium heat.
- Season both sides of the chicken breasts with salt, pepper, and 1 teaspoon of Italian seasoning.
- Add the seasoned chicken to the skillet and cook for about 5-7 minutes on each side until golden-brown.
- Remove the chicken from the skillet and set aside to rest.
- Toss in the minced garlic, sliced mushrooms, and zucchini into the same skillet.
- Sauté for roughly 5 minutes until the vegetables are tender and golden.
- Slice the cooked chicken into strips and add it back to the skillet, mixing everything together.
- Garnish with freshly chopped parsley and serve immediately.
