Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 cup mushrooms, sliced
  • 1 medium zucchini, sliced
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat 2 tablespoons of olive oil in a large skillet over medium heat.
  2. Season both sides of the chicken breasts with salt, pepper, and 1 teaspoon of Italian seasoning.
  3. Add the seasoned chicken to the skillet and cook for about 5-7 minutes on each side until golden-brown.
  4. Remove the chicken from the skillet and set aside to rest.
  5. Toss in the minced garlic, sliced mushrooms, and zucchini into the same skillet.
  6. Sauté for roughly 5 minutes until the vegetables are tender and golden.
  7. Slice the cooked chicken into strips and add it back to the skillet, mixing everything together.
  8. Garnish with freshly chopped parsley and serve immediately.
