A delightful combination of moist carrot cake and creamy cheesecake filling, topped with a sweet glaze.


Ingredients

  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1 cup vegetable oil
  • 4 large eggs
  • 3 cups grated carrots
  • 1 cup crushed pineapple, drained
  • 1 cup chopped walnuts (optional)
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup milk
  • 1/2 cup brown sugar
  • 1/4 cup butter
  • 1 teaspoon vanilla extract (for glaze)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a large bowl, mix together flour, sugar, baking powder, baking soda, cinnamon, and salt.
  3. In another bowl, whisk together oil, eggs, grated carrots, and crushed pineapple.
  4. Combine the wet and dry ingredients until just mixed.
  5. Divide the batter evenly between the prepared pans and bake for 25-30 minutes or until a toothpick comes out clean.
  6. While the cakes are baking, prepare the cheesecake filling by beating together cream cheese, powdered sugar, vanilla extract, and milk until smooth.
  7. Once the cakes are cool, spread the cheesecake filling between the layers.
  8. For the glaze, melt butter and brown sugar in a saucepan, then stir in vanilla extract.
  9. Drizzle the glaze over the top of the cake before serving.

Notes

  • Make sure to let the cakes cool completely before adding the cheesecake filling.
  • For added flavor, you can include raisins or coconut in the carrot cake batter.
