Description
A warm and comforting hobo casserole made with ground beef, potatoes, and green beans, topped with melted cheese.
Ingredients

- 1 pound ground beef
- 4 medium potatoes, sliced
- 2 cups fresh green beans, trimmed and cut
- 1 cup shredded cheese (cheddar or your choice)
- 1 onion, chopped
- 2 cloves garlic, minced
- Salt and pepper to taste
- 1 cup beef broth or water
Instructions
- Preheat your oven to 375°F (190°C).
- Brown the ground beef in a large skillet over medium heat for 5-7 minutes.
- Sauté the chopped onion and minced garlic until the onion turns translucent, about 3-4 minutes.
- Layer the ingredients in a greased baking dish: sliced potatoes, beef mixture, and green beans.
- Add the beef broth or water over the layers, and season with salt and pepper.
- Cover the baking dish with foil and bake for 45 minutes.
- Remove the foil, sprinkle cheese on top, and bake uncovered for another 15 minutes.
- Cool for a few minutes before serving.
Notes
Assemble the casserole a day in advance for deeper flavor. You can substitute with ground turkey or plant-based meat for a lighter version.
