Description

A warm and comforting hobo casserole made with ground beef, potatoes, and green beans, topped with melted cheese.


Ingredients

  • 1 pound ground beef
  • 4 medium potatoes, sliced
  • 2 cups fresh green beans, trimmed and cut
  • 1 cup shredded cheese (cheddar or your choice)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 cup beef broth or water

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Brown the ground beef in a large skillet over medium heat for 5-7 minutes.
  3. Sauté the chopped onion and minced garlic until the onion turns translucent, about 3-4 minutes.
  4. Layer the ingredients in a greased baking dish: sliced potatoes, beef mixture, and green beans.
  5. Add the beef broth or water over the layers, and season with salt and pepper.
  6. Cover the baking dish with foil and bake for 45 minutes.
  7. Remove the foil, sprinkle cheese on top, and bake uncovered for another 15 minutes.
  8. Cool for a few minutes before serving.

Notes

Assemble the casserole a day in advance for deeper flavor. You can substitute with ground turkey or plant-based meat for a lighter version.
