Description

A delightful and nostalgic German Potato Salad full of tender baby potatoes, crispy bacon, and a tangy dressing for a perfect comfort dish.


Ingredients

  • 2 pounds baby potatoes
  • 6 strips bacon
  • 1 medium onion, chopped
  • 1 shallot, chopped
  • 2 tablespoons chives, chopped
  • 1/4 cup apple cider vinegar
  • 2 tablespoons Dijon mustard
  • 1/4 cup olive oil
  • Salt and pepper to taste

Instructions

  1. Boil the potatoes in salted water until fork-tender, about 15-20 minutes, then drain and cool slightly.
  2. Cook the bacon in a frying pan over medium heat until crispy. Remove and chop into pieces.
  3. Sauté the onions and shallots in the same pan until soft, about 3-4 minutes.
  4. Make the dressing by whisking the vinegar, mustard, olive oil, salt, and pepper in a bowl.
  5. Combine warm potatoes, bacon, sautéed onions, and chives in a large bowl.
  6. Dress the salad with the dressing and toss gently. Serve warm or at room temperature.

Notes

For extra flavor, add pickles or jalapeños. This salad can be prepped a day ahead; add dressing right before serving.
