- 2 pounds baby potatoes
- 6 strips bacon
- 1 medium onion, chopped
- 1 shallot, chopped
- 2 tablespoons chives, chopped
- 1/4 cup apple cider vinegar
- 2 tablespoons Dijon mustard
- 1/4 cup olive oil
- Salt and pepper to taste
Instructions
- Boil the potatoes in salted water until fork-tender, about 15-20 minutes, then drain and cool slightly.
- Cook the bacon in a frying pan over medium heat until crispy. Remove and chop into pieces.
- Sauté the onions and shallots in the same pan until soft, about 3-4 minutes.
- Make the dressing by whisking the vinegar, mustard, olive oil, salt, and pepper in a bowl.
- Combine warm potatoes, bacon, sautéed onions, and chives in a large bowl.
- Dress the salad with the dressing and toss gently. Serve warm or at room temperature.
Notes
For extra flavor, add pickles or jalapeños. This salad can be prepped a day ahead; add dressing right before serving.
