Description

Garlic Parmesan Potato Nachos are a delightful fusion of crispy, golden potato slices topped with a rich, creamy garlic sauce and a generous sprinkle of Parmesan cheese. Each bite offers a satisfying crunch followed by a burst of savory flavors that dance on your palate, making them an irresistible snack or appetizer.

Ingredients

  • Potatoes: 4 large russet potatoes, scrubbed and thinly sliced
  • Garlic Sauce: 1/2 cup sour cream, 2 cloves garlic (minced), 1 tablespoon olive oil, 1 teaspoon lemon juice, salt and pepper to taste
  • Toppings: 1 cup shredded Parmesan cheese, 1/2 cup chopped fresh parsley, 1/4 teaspoon red pepper flakes (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Arrange the potato slices in a single layer on a baking sheet lined with parchment paper.
  3. Drizzle with olive oil and season with salt and pepper, tossing to coat evenly.
  4. Bake for 25-30 minutes, flipping halfway through, until the potatoes are golden brown and crispy.
  5. While the potatoes are baking, mix the garlic sauce ingredients in a bowl until smooth.
  6. Once the potatoes are done, remove them from the oven and drizzle the garlic sauce over the top.
  7. Sprinkle the shredded Parmesan cheese evenly over the potatoes.
  8. Return to the oven for an additional 5-7 minutes, or until the cheese is melted and bubbly.
  9. Remove from the oven, garnish with chopped parsley and red pepper flakes, and serve immediately.

Notes

  • Make-ahead: You can prepare the garlic sauce a day in advance and store it in the refrigerator.
  • Storage: Leftover nachos can be stored in an airtight container in the fridge for up to 2 days, but they are best enjoyed fresh.
  • Substitutions: For a vegan version, use cashew cream instead of sour cream and nutritional yeast instead of Parmesan cheese.
