Description

Ingredients

  • 2 pounds small red potatoes
  • 1 pound green beans, trimmed
  • 1/4 cup Dijon mustard
  • 1/4 cup red wine vinegar
  • 1/4 cup olive oil
  • Salt and pepper to taste
  • Fresh herbs (like parsley or chives) for garnish

Instructions

  1. Begin by boiling the potatoes in a large pot of salted water until tender for about 15 to 20 minutes.
  2. In the same pot, blanch the green beans for 2 to 3 minutes. Transfer to an ice bath immediately.
  3. While the vegetables cool, whisk together the Dijon mustard, red wine vinegar, olive oil, salt, and pepper.
  4. In a large mixing bowl, combine the potatoes and green beans. Pour the vinaigrette over them and toss gently.
  5. Finally, garnish with fresh herbs before serving.

Notes

Best served fresh, but can be made a day ahead without the dressing. Store leftovers in an airtight container in the fridge.
