- 2 pounds small red potatoes
- 1 pound green beans, trimmed
- 1/4 cup Dijon mustard
- 1/4 cup red wine vinegar
- 1/4 cup olive oil
- Salt and pepper to taste
- Fresh herbs (like parsley or chives) for garnish
Instructions
- Begin by boiling the potatoes in a large pot of salted water until tender for about 15 to 20 minutes.
- In the same pot, blanch the green beans for 2 to 3 minutes. Transfer to an ice bath immediately.
- While the vegetables cool, whisk together the Dijon mustard, red wine vinegar, olive oil, salt, and pepper.
- In a large mixing bowl, combine the potatoes and green beans. Pour the vinaigrette over them and toss gently.
- Finally, garnish with fresh herbs before serving.
Notes
Best served fresh, but can be made a day ahead without the dressing. Store leftovers in an airtight container in the fridge.
