A vibrant and nutritious salad bringing together five types of beans, perfect for any occasion.

Ingredients

Scale
  • 1 can kidney beans, drained and rinsed
  • 1 can black beans, drained and rinsed
  • 1 can garbanzo beans, drained and rinsed
  • 1 can green beans, drained
  • 1 can wax beans, drained
  • 1/2 cup red onion, chopped
  • 1/4 cup olive oil
  • 1/4 cup apple cider vinegar
  • 2 tablespoons honey or maple syrup
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Combine the kidney beans, black beans, garbanzo beans, green beans, and wax beans in a large bowl, ensuring they’re evenly mixed.
  2. Add the chopped red onion for an enticing crunch.
  3. Whisk together the olive oil, apple cider vinegar, honey (or maple syrup), salt, and pepper in a separate bowl until a silky dressing forms.
  4. Pour the vinaigrette over the bean mixture and toss gently to coat.
  5. Let the salad sit for at least 10 minutes at room temperature to allow the flavors to meld.
  6. Garnish with fresh parsley if desired before serving.

Notes

This salad can be made ahead and stored in the fridge for up to five days. For a twist, try roasting the beans for added flavor.
