Instructions

  3. Caramelize the onions: In the same skillet where the bacon was cooked, sauté the chopped onion in the residual bacon drippings until golden and fragrant.
  4. Whisk together the dressing: In a mixing bowl, combine the apple cider vinegar, sugar, and vegetable oil. Whisk vigorously until emulsified, then stir in the caramelized onions and crumbled bacon.
  5. Combine everything: In a large bowl, gently fold the cubed potatoes with the dressing, ensuring every piece gets coated. Season with salt and pepper to taste. Serve warm and garnish with fresh chives.
