Description

A comforting and festive Taco Casserole made easy in the crockpot, packed with layers of flavor and topped with gooey cheese.


Ingredients

  • 1 lb ground beef or turkey
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes with green chilies
  • 1 packet taco seasoning
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 810 corn tortillas, cut into strips
  • Optional toppings: Sour cream, avocado, cilantro, jalapeños

Instructions

  1. Brown the meat in a skillet until cooked through; drain excess grease.
  2. Combine the cooked meat, black beans, corn, diced tomatoes, and taco seasoning in the slow cooker.
  3. Layer half of the tortilla strips and half of the shredded cheese over the meat mixture.
  4. Repeat the layers with remaining tortilla strips and cheese.
  5. Cook on low for 4-6 hours until heated through and cheese is melted.
  6. Serve warm and allow guests to customize with toppings.

Notes

For make-ahead, assemble up to a day in advance and refrigerate. For quicker cooking, you can also bake at 350°F for 30-40 minutes.
