A comforting and festive Taco Casserole made easy in the crockpot, packed with layers of flavor and topped with gooey cheese.
Ingredients

- 1 lb ground beef or turkey
- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 1 can diced tomatoes with green chilies
- 1 packet taco seasoning
- 2 cups shredded cheese (cheddar or Mexican blend)
- 8–10 corn tortillas, cut into strips
- Optional toppings: Sour cream, avocado, cilantro, jalapeños
Instructions
- Brown the meat in a skillet until cooked through; drain excess grease.
- Combine the cooked meat, black beans, corn, diced tomatoes, and taco seasoning in the slow cooker.
- Layer half of the tortilla strips and half of the shredded cheese over the meat mixture.
- Repeat the layers with remaining tortilla strips and cheese.
- Cook on low for 4-6 hours until heated through and cheese is melted.
- Serve warm and allow guests to customize with toppings.
Notes
For make-ahead, assemble up to a day in advance and refrigerate. For quicker cooking, you can also bake at 350°F for 30-40 minutes.
