Ingredients
- Potatoes: 4 large russet potatoes, scrubbed clean

Instructions
- Preheat your oven to 400°F (200°C).
- Slice the potatoes in half lengthwise and scoop out the insides, leaving about 1/4 inch of flesh.

- Place the skins cut-side down on a baking sheet and roast for 20 minutes until they start to crisp.

- After 20 minutes, flip the potato skins over, sprinkle the garlic herb mixture inside, and add grated Parmesan if using.
- Return to the oven and roast for an additional 10-15 minutes until golden brown and crispy.
- Remove from the oven and let cool slightly before serving.
