- 1 cup of cream cheese, softened
- 1/2 cup sour cream
- 1 cup shredded cheddar cheese
- 1/4 cup diced red onion
- 1/4 cup chopped cilantro
- 1 jalapeño, seeded and diced
- 1 tablespoon lime juice
- Salt and pepper to taste
- Tortilla chips or fresh veggies for serving
Instructions
- Prepare your base: In a mixing bowl, combine the softened cream cheese, sour cream, and lime juice. Using a spatula, mix until smooth.
- Fold in the drained corn, shredded cheddar cheese, diced red onion, chopped cilantro, and diced jalapeño.
- Season with salt and pepper to taste, mixing gently.
- Serve and enjoy: Transfer the dip to a serving bowl and chill for at least 30 minutes before serving.
Notes
Let the cream cheese soften at room temperature for easy mixing. This dip can also be served warm by baking it.
