  • 1 cup boiling water
  • 1 cup cold water
  • 1 package of cream cheese (8 oz)
  • 1 cup powdered sugar
  • 1 cup heavy whipping cream
  • 1 teaspoon vanilla extract
  • Graham crackers or sponge cake
  • Fresh berries for topping (optional)

Instructions

  1. Dissolve the gelatin: In a mixing bowl, combine one package of berry-flavored gelatin with 1 cup of boiling water. Stir until the gelatin completely dissolves. Add 1 cup of cold water, mixing gently, and pour this mixture into a mold or dish. Refrigerate until set, about 120 minutes.
  2. Prepare the cream cheese mixture: In a separate bowl, beat 1 package of cream cheese until smooth and creamy, which should take about 2 minutes. Gradually add in 1 cup of powdered sugar and 1 teaspoon of vanilla extract, blending until fluffy.
  3. Whip the cream: In another bowl, whip 1 cup of heavy cream until stiff peaks form. Fold this whipped cream into the cream cheese mixture gently.
  4. Layer the dessert: In a 9×13 dish, layer graham crackers or sponge cake at the base. Spoon half of the cream cheese mixture evenly over the crackers. Cut half of the set gelatin into cubes and sprinkle on top. Repeat the layers, finishing with the remaining gelatin.
  5. Top and chill: If desired, crown your dessert with fresh berries. Cover with plastic wrap and chill for several hours or overnight. Cut into squares to serve.
