- 1 lb chicken breast, diced
- 2 tbsp jerk seasoning
- 1 cup coconut milk
- 1 cup bell peppers (red, green, yellow), sliced
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 tbsp olive oil
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Cook the Pasta: Bring a large pot of salted water to a boil. Add pasta and cook according to the package instructions until al dente. Drain the pasta and set aside, reserving a little pasta water.
- Sauté Aromatics: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until fragrant and the onion turns translucent.
- Brown the Chicken: Add the diced chicken to the skillet, followed by the jerk seasoning. Cook until the chicken is browned and cooked through, about 6–8 minutes.
- Incorporate Bell Peppers: Toss in the sliced bell peppers, cooking for an additional 3-4 minutes until they soften slightly but remain vibrant.
- Make it Creamy: Pour in the coconut milk, stirring to combine. Allow the mixture to come to a gentle simmer.
- Combine with Pasta: Fold in the cooked pasta, tossing to coat evenly. Add reserved pasta water as needed for sauce consistency.
- Season and Serve: Season with salt and pepper to taste. Remove from heat and serve warm, garnished with fresh cilantro.
