  • 8 oz pasta (fettuccine or penne)
  • 1 lb jerk seasoned chicken breast
  • 1 tablespoon olive oil
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Bring a large pot of salted water to a boil, then add the pasta. Cook according to the package instructions until al dente, then drain and set aside, reserving a little pasta water.
  2. In a large skillet, warm the olive oil over medium heat. Add the jerk-seasoned chicken breasts and cook until they brown nicely, about 6-7 minutes. Ensure the chicken reaches an internal temperature of 165°F. Remove the chicken from the skillet and let it rest while you prepare the sauce.
  3. In the same skillet, add the sliced bell peppers, diced onion, and minced garlic. Sauté until the vegetables soften and develop a little color, approximately 5 minutes.
  4. Lower the heat to medium-low, and stir in the heavy cream and grated Parmesan cheese. Mix until the sauce turns creamy and well-combined.
  5. Add the cooked pasta to the skillet, then season generously with salt and pepper. Toss gently to coat every noodle in that rich, creamy goodness.
  6. Slice the cooked chicken and place it atop the pasta. Garnish with fresh parsley before serving.
