- 8 oz pasta (fettuccine or penne)
- 1 lb jerk seasoned chicken breast
- 1 tablespoon olive oil
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 green bell pepper, sliced
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Bring a large pot of salted water to a boil, then add the pasta. Cook according to the package instructions until al dente, then drain and set aside, reserving a little pasta water.
- In a large skillet, warm the olive oil over medium heat. Add the jerk-seasoned chicken breasts and cook until they brown nicely, about 6-7 minutes. Ensure the chicken reaches an internal temperature of 165°F. Remove the chicken from the skillet and let it rest while you prepare the sauce.
- In the same skillet, add the sliced bell peppers, diced onion, and minced garlic. Sauté until the vegetables soften and develop a little color, approximately 5 minutes.
- Lower the heat to medium-low, and stir in the heavy cream and grated Parmesan cheese. Mix until the sauce turns creamy and well-combined.
- Add the cooked pasta to the skillet, then season generously with salt and pepper. Toss gently to coat every noodle in that rich, creamy goodness.
- Slice the cooked chicken and place it atop the pasta. Garnish with fresh parsley before serving.
