- 1 ½ cups all-purpose flour
- 1 cup granulated sugar
- ½ teaspoon baking powder
- ¼ teaspoon baking soda
- ¾ teaspoon salt
- ½ cup unsalted butter, melted
- 2 large eggs
- 1 teaspoon vanilla extract
- ¼ cup sour cream
- 1 tablespoon lemon zest
- ¼ cup fresh lemon juice
- 1 cup powdered sugar
- 2 tablespoons fresh lemon juice (for glaze)
Instructions
- Preheat your oven to 350°F (175°C) and grease or line your loaf pan.
- Whisk together flour, sugar, baking powder, baking soda, and salt in a mixing bowl.
- Combine melted butter, eggs, vanilla extract, sour cream, lemon zest, and lemon juice in another bowl and whisk until smooth.
- Gradually add the wet ingredients to the dry ingredients, stirring gently until just combined.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 50-60 minutes or until a toothpick comes out clean.
- Let the cake cool in the pan for 10 minutes before transferring to a wire rack.
- Whisk together powdered sugar and lemon juice for the glaze, then drizzle over the cooled cake.
- Slice, serve, and enjoy!
Notes
You can make the batter a night before. It can also be baked in an air fryer at 320°F for 30-35 minutes.
