A delightful homemade version of the beloved Starbucks Lemon Loaf, featuring a perfectly moist crumb and a tangy lemon glaze.


Ingredients

  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • ½ teaspoon baking powder
  • ¼ teaspoon baking soda
  • ¾ teaspoon salt
  • ½ cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ¼ cup sour cream
  • 1 tablespoon lemon zest
  • ¼ cup fresh lemon juice
  • 1 cup powdered sugar
  • 2 tablespoons fresh lemon juice (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease or line your loaf pan.
  2. Whisk together flour, sugar, baking powder, baking soda, and salt in a mixing bowl.
  3. Combine melted butter, eggs, vanilla extract, sour cream, lemon zest, and lemon juice in another bowl and whisk until smooth.
  4. Gradually add the wet ingredients to the dry ingredients, stirring gently until just combined.
  5. Pour the batter into the prepared loaf pan and smooth the top.
  6. Bake for 50-60 minutes or until a toothpick comes out clean.
  7. Let the cake cool in the pan for 10 minutes before transferring to a wire rack.
  8. Whisk together powdered sugar and lemon juice for the glaze, then drizzle over the cooled cake.

Notes

You can make the batter a night before. It can also be baked in an air fryer at 320°F for 30-35 minutes.
