  • 1 cup raisins
  • 1 tablespoon malt syrup (optional)
  • Sesame seeds or everything bagel seasoning (optional)

Instructions

  1. Activate the yeast: In a large bowl, combine warm water, yeast, and sugar. Let it sit until bubbly—about 5 minutes.
  2. Mix dry ingredients: In another bowl, whisk together bread flour, salt, and cinnamon.
  3. Combine wet and dry: Gradually add the dry mix into the yeast mixture, stirring until a rough dough forms.
  4. Knead the dough: Transfer the dough onto a floured surface and knead for about 10 minutes.
  5. Incorporate raisins: Gently fold in the raisins during the last minute of kneading.
  6. Let it rise: Place the dough in a greased bowl, cover it, and let it rise until it doubles in size—about 1 hour.
  7. Preheat the oven: While the dough is rising, preheat your oven to 425°F (220°C).
  8. Boil the bagels: In a large pot, bring water to a boil and stir in malt syrup if using.
  9. Shape the dough: Punch down the dough, divide it into 8 pieces, and form each into a bagel.
  10. Boil each bagel: Carefully boil each bagel for 1-2 minutes on each side.
  11. Bake to perfection: Transfer the boiled bagels to a parchment-lined baking sheet and sprinkle with sesame seeds if desired.
  12. Cool and serve: Allow bagels to cool on a wire rack before enjoying.
