Instructions
- Activate the yeast: In a large bowl, combine warm water, yeast, and sugar. Let it sit until bubbly—about 5 minutes.
- Mix dry ingredients: In another bowl, whisk together bread flour, salt, and cinnamon.
- Combine wet and dry: Gradually add the dry mix into the yeast mixture, stirring until a rough dough forms.
- Knead the dough: Transfer the dough onto a floured surface and knead for about 10 minutes.
- Incorporate raisins: Gently fold in the raisins during the last minute of kneading.
- Let it rise: Place the dough in a greased bowl, cover it, and let it rise until it doubles in size—about 1 hour.
- Preheat the oven: While the dough is rising, preheat your oven to 425°F (220°C).
- Boil the bagels: In a large pot, bring water to a boil and stir in malt syrup if using.
- Shape the dough: Punch down the dough, divide it into 8 pieces, and form each into a bagel.
- Boil each bagel: Carefully boil each bagel for 1-2 minutes on each side.
- Bake to perfection: Transfer the boiled bagels to a parchment-lined baking sheet and sprinkle with sesame seeds if desired.
- Cool and serve: Allow bagels to cool on a wire rack before enjoying.
