Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 apple, diced
  • 1 teaspoon cinnamon
  • 2 tablespoons honey or maple syrup
  • 1/4 cup walnuts, chopped
  • 1/4 cup raisins
  • 1/2 cup almond milk (or milk of choice)

Instructions

  1. Rinse the quinoa under cold water.
  2. In a pot, combine quinoa and water, bring to a boil.
  3. Reduce heat, cover, and simmer for 15 minutes or until water is absorbed.
  4. In a separate pan, sauté the diced apple with cinnamon until soft.
  5. Once quinoa is cooked, fluff with a fork and mix in the sautéed apples.
  6. Drizzle with honey or maple syrup and stir in walnuts and raisins.
  7. Serve warm with almond milk poured over the top.

Notes

  • For a vegan option, use maple syrup instead of honey.
  • Feel free to add other fruits or nuts as desired.
