Ingredients

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Sauté the diced chicken seasoned with salt and pepper until golden brown, about 5-7 minutes.
  3. Add the diced red bell pepper, black beans, and sweet corn, and cook for an additional 2 minutes.
  4. Combine the rice and chicken broth, stirring thoroughly, and bring to a boil.
  5. Let it simmer on low heat, covered, for about 15 minutes.
  6. Finish by stirring in the chopped cilantro and lime juice.
