Instructions
- Heat the olive oil in a large skillet over medium heat.
- Sauté the diced chicken seasoned with salt and pepper until golden brown, about 5-7 minutes.
- Add the diced red bell pepper, black beans, and sweet corn, and cook for an additional 2 minutes.
- Combine the rice and chicken broth, stirring thoroughly, and bring to a boil.
- Let it simmer on low heat, covered, for about 15 minutes.
- Finish by stirring in the chopped cilantro and lime juice.
