A refreshing salad that captures the essence of the Mediterranean with vibrant flavors from chickpeas, quinoa, and fresh vegetables.
Ingredients

- 1 cup quinoa
- 1 can chickpeas (garbanzo beans), drained and rinsed
- 1 cucumber, diced
- 1 cup cherry tomatoes, halved
- 1/4 red onion, finely chopped
- 1/4 cup parsley, chopped
- 1/4 cup feta cheese, crumbled (optional)
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
Instructions
- Rinse the quinoa under cold water until the water runs clear. In a medium pot, combine the rinsed quinoa and 2 cups of water. Bring to a boil, then lower the heat and cover. Let it simmer for about 15 minutes or until all the water is absorbed. Fluff with a fork and allow to cool.
- Combine the cooled quinoa, chickpeas, diced cucumber, halved cherry tomatoes, finely chopped red onion, parsley, and feta cheese (if using) in a large mixing bowl.
- Whisk together olive oil, lemon juice, and a pinch of salt and pepper in a small bowl to prepare the dressing.
- Drizzle the dressing over your colorful salad and toss gently to combine all the ingredients.
- Serve immediately or refrigerate for 30 minutes to enhance the flavors.
