Delight in these easy and flavorful foil packets filled with chicken, sausage, potatoes, broccoli, and corn, perfect for busy weeknights.


Ingredients

  • 2 chicken breasts
  • 2 sausages (Italian works wonderfully)
  • 4 medium potatoes, diced
  • 1 cup broccoli florets
  • 1 cup corn (frozen or fresh)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Combine the diced potatoes, broccoli, corn, and sausages in a large bowl.
  3. Drizzle the mixture with olive oil, sprinkle with garlic powder, paprika, salt, and pepper, then toss thoroughly.
  4. Lay out 4 large sheets of aluminum foil on a flat surface.
  5. Divide the mixture evenly into the center of each sheet, topping each with a chicken breast.
  6. Fold the foil into packets, sealing them tightly.
  7. Place the packets on a baking sheet and bake for 25-30 minutes.
  8. Carefully open the packets to let the steam escape and serve warm.

Notes

Make-ahead by preparing the packets early in the day and refrigerating. These packets can also be cooked on the grill or in an air fryer.
