- 2 chicken breasts
- 2 sausages (Italian works wonderfully)
- 4 medium potatoes, diced
- 1 cup broccoli florets
- 1 cup corn (frozen or fresh)
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Combine the diced potatoes, broccoli, corn, and sausages in a large bowl.
- Drizzle the mixture with olive oil, sprinkle with garlic powder, paprika, salt, and pepper, then toss thoroughly.
- Lay out 4 large sheets of aluminum foil on a flat surface.
- Divide the mixture evenly into the center of each sheet, topping each with a chicken breast.
- Fold the foil into packets, sealing them tightly.
- Place the packets on a baking sheet and bake for 25-30 minutes.
- Carefully open the packets to let the steam escape and serve warm.
Notes
Make-ahead by preparing the packets early in the day and refrigerating. These packets can also be cooked on the grill or in an air fryer.
