Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup uncooked rice
  • 2 cups chicken broth
  • 1 can cream of chicken soup
  • 1 cup milk
  • 1 cup frozen mixed vegetables
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1 1/2 cups crushed Ritz crackers
  • 1/2 cup melted butter

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the cooked chicken, uncooked rice, chicken broth, cream of chicken soup, milk, mixed vegetables, garlic powder, onion powder, and black pepper.
  3. Pour the mixture into a greased 9×13 inch baking dish.
  4. In a separate bowl, mix the crushed Ritz crackers with melted butter until well combined.
  5. Spread the cracker mixture evenly over the top of the casserole.
  6. Bake in the preheated oven for 45-50 minutes, or until the rice is tender and the top is golden brown.
  7. Let it cool for a few minutes before serving.
