- 2 cups cooked chicken, shredded
- 1 cup uncooked rice
- 2 cups chicken broth
- 1 can cream of chicken soup
- 1 cup milk
- 1 cup frozen mixed vegetables
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon black pepper
- 1 1/2 cups crushed Ritz crackers
- 1/2 cup melted butter
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine the cooked chicken, uncooked rice, chicken broth, cream of chicken soup, milk, mixed vegetables, garlic powder, onion powder, and black pepper.
- Pour the mixture into a greased 9×13 inch baking dish.
- In a separate bowl, mix the crushed Ritz crackers with melted butter until well combined.
- Spread the cracker mixture evenly over the top of the casserole.
- Bake in the preheated oven for 45-50 minutes, or until the rice is tender and the top is golden brown.
- Let it cool for a few minutes before serving.

- For added flavor, you can include herbs like thyme or parsley.
- This casserole can be made ahead of time and stored in the refrigerator before baking.
