Description
Indulge in delicious tacos filled with seasoned ground beef, zesty Rotel tomatoes, and gooey cheese, wrapped in soft tortillas for a delightful meal.
Ingredients
Scale
- 1 lb ground beef
- 1 can Rotel tomatoes
- 1 cup shredded cheese (Cheddar, Monterey Jack, or Mexican blend)
- 8 soft tortillas (flour or corn)
- 1 tablespoon taco seasoning
- Salt and pepper to taste
Instructions
- Brown the beef: Heat a large skillet over medium heat. Add the ground beef, breaking it apart with a spatula. Cook until it’s evenly browned, about 5-7 minutes. Drain excess fat, leaving just a little for flavor.
- Mix in Rotel and seasoning: Pour in the can of Rotel tomatoes and taco seasoning. Stir well, and let the mixture simmer over low heat for about 5 minutes.
- Warm the tortillas: In a separate skillet or microwave, warm your tortillas briefly until they’re soft and pliable.
- Assemble the tacos: Spoon a generous amount of the beef mixture into the center of each tortilla. Top generously with shredded cheese.
- Roll and serve: Fold the tortillas over the filling, creating delightful packages of flavor. Serve warm.
Notes
Make-Ahead: Prepare the beef mixture up to a day in advance and reheat when ready to assemble. Customize by adding black beans or corn for extra flavor.
