A refreshing and zesty dessert made with calamansi juice, perfect for any occasion.
Ingredients

- 1 cup all-purpose flour
- 1/4 cup powdered sugar
- 1/2 cup unsalted butter, softened
- 1/2 cup calamansi juice
- 1 cup heavy cream
- 1/2 cup granulated sugar
- 2 large eggs
- 1 tablespoon calamansi zest
- 1/2 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix flour and powdered sugar, then cut in butter until crumbly.
- Press the mixture into a tart pan and bake for 15 minutes.
- In another bowl, whisk together calamansi juice, granulated sugar, eggs, zest, and vanilla.
- Pour the mixture into the baked tart shell and bake for an additional 20 minutes.
- Let it cool, then whip the heavy cream and spread it over the tart.
- Chill in the refrigerator for at least 2 hours before serving.
Notes
- For a sweeter tart, adjust the sugar to taste.
- Can be garnished with calamansi slices or zest.
- Store leftovers in the refrigerator for up to 3 days.
