A refreshing and zesty dessert made with calamansi juice, perfect for any occasion.


Ingredients

  • 1 cup all-purpose flour
  • 1/4 cup powdered sugar
  • 1/2 cup unsalted butter, softened
  • 1/2 cup calamansi juice
  • 1 cup heavy cream
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 tablespoon calamansi zest
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix flour and powdered sugar, then cut in butter until crumbly.
  3. Press the mixture into a tart pan and bake for 15 minutes.
  4. In another bowl, whisk together calamansi juice, granulated sugar, eggs, zest, and vanilla.
  5. Pour the mixture into the baked tart shell and bake for an additional 20 minutes.
  6. Let it cool, then whip the heavy cream and spread it over the tart.
  7. Chill in the refrigerator for at least 2 hours before serving.

Notes

  • For a sweeter tart, adjust the sugar to taste.
  • Can be garnished with calamansi slices or zest.
  • Store leftovers in the refrigerator for up to 3 days.
