Ingredients

  • Crusty Bread (ciabatta or sourdough)
  • Goat Cheese
  • Fresh Blueberries
  • Fresh Basil
  • Olive Oil

Instructions

  1. Preheat your panini press or skillet over medium heat.
  2. Slice the bread into thick pieces, about 1 inch.
  3. Spread a generous layer of goat cheese on one side of each slice of bread.
  4. Distribute fresh blueberries over half of the slices and press down lightly.
  5. Sprinkle chopped basil over the blueberries.
  6. Cover with the remaining slices of bread, cheese side down.
  7. Brush the exterior of each sandwich with olive oil.
  8. Grill in the press for 4-5 minutes, or until golden brown and the cheese has melted.
  9. Let the panini cool for a minute before slicing diagonally.
