- 2 pounds waxy potatoes
- 4 slices bacon
- 1 medium onion, chopped
- 1/4 cup honey
- 1/4 cup apple cider vinegar
- 1/2 cup vegetable broth
- Salt and pepper to taste

Instructions
- Boil the potatoes in a large pot of salted water until tender, about 15-20 minutes. Drain and let cool before slicing.
- Cook the bacon in a skillet over medium heat until crispy, about 5-7 minutes. Remove and crumble.
- Sauté the chopped onions in the bacon fat until golden and caramelized, about 8-10 minutes.
- Prepare the dressing by whisking together honey, apple cider vinegar, and vegetable broth in a mixing bowl.
- Combine the sliced potatoes, caramelized onions, and crumbled bacon in a large bowl. Pour the dressing over and toss gently.
- Season with salt and pepper to taste.
- Serve warm or chilled, garnished with chopped parsley.
Notes
For an even creamier dressing, consider adding Dijon mustard. You can customize with ingredients like bell peppers or hard-boiled eggs.
