Ingredients

Instructions

  1. Boil the potatoes in a large pot of salted water until tender, about 15-20 minutes. Drain and let cool before slicing.
  2. Cook the bacon in a skillet over medium heat until crispy, about 5-7 minutes. Remove and crumble.
  3. Sauté the chopped onions in the bacon fat until golden and caramelized, about 8-10 minutes.
  4. Prepare the dressing by whisking together honey, apple cider vinegar, and vegetable broth in a mixing bowl.
  5. Combine the sliced potatoes, caramelized onions, and crumbled bacon in a large bowl. Pour the dressing over and toss gently.
