- 2 medium sweet potatoes, diced
- 1 lb chicken breast, cooked and shredded
- 1 cup BBQ sauce
- 1 cup corn, canned or frozen
- 1 cup black beans, drained and rinsed
- 1 avocado, sliced
- 1/4 cup green onions, chopped
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Spread the diced sweet potatoes on a baking sheet, drizzle with olive oil, and season with salt and pepper.
- Bake for 25-30 minutes or until tender and slightly caramelized.
- In a large bowl, combine the shredded chicken with BBQ sauce.
- Once the sweet potatoes are done, assemble the bowls by adding sweet potatoes, BBQ chicken, corn, black beans, and avocado.
