A hearty meatloaf enhanced with creamy mac and cheese, wrapped in crispy bacon and glazed with maple BBQ sauce.

- 1 lb ground beef
- 1 lb ground pork
- 1 cup cooked macaroni and cheese
- 8 slices of bacon
- 1/2 cup breadcrumbs
- 1/4 cup chopped onion
- 1/4 cup chopped green bell pepper
- 1/4 cup ketchup
- 1/4 cup maple syrup
- 2 tablespoons Worcestershire sauce
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup shredded cheese (optional for topping)
Instructions
- Preheat your oven to 350°F (175°C).
- Combine ground beef, ground pork, breadcrumbs, onion, green bell pepper, ketchup, maple syrup, Worcestershire sauce, garlic powder, salt, and black pepper in a large bowl.
- Lay out the bacon slices in a rectangle on parchment paper.
- Spread half of the meat mixture over the bacon and place the mac and cheese in the center.
- Top with the remaining meat mixture and roll the bacon around the meatloaf.
- Transfer the meatloaf to a baking dish, drizzle with additional maple syrup if desired.
- Bake for 45-50 minutes until the internal temperature reaches 160°F (70°C).
- Sprinkle shredded cheese on top and return to the oven until melted.
- Let it rest for 10 minutes before slicing and serving.
