Description

A hearty meatloaf enhanced with creamy mac and cheese, wrapped in crispy bacon and glazed with maple BBQ sauce.


Ingredients

  • 1 lb ground beef
  • 1 lb ground pork
  • 1 cup cooked macaroni and cheese
  • 8 slices of bacon
  • 1/2 cup breadcrumbs
  • 1/4 cup chopped onion
  • 1/4 cup chopped green bell pepper
  • 1/4 cup ketchup
  • 1/4 cup maple syrup
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup shredded cheese (optional for topping)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine ground beef, ground pork, breadcrumbs, onion, green bell pepper, ketchup, maple syrup, Worcestershire sauce, garlic powder, salt, and black pepper in a large bowl.
  3. Lay out the bacon slices in a rectangle on parchment paper.
  4. Spread half of the meat mixture over the bacon and place the mac and cheese in the center.
  5. Top with the remaining meat mixture and roll the bacon around the meatloaf.
  6. Transfer the meatloaf to a baking dish, drizzle with additional maple syrup if desired.
  7. Bake for 45-50 minutes until the internal temperature reaches 160°F (70°C).
  8. Sprinkle shredded cheese on top and return to the oven until melted.
  9. Let it rest for 10 minutes before slicing and serving.
