  • 1/2 cup almond flour
  • 1/2 cup sugar
  • 1/4 cup poppy seeds
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup buttermilk
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon almond extract
  • 1/2 teaspoon vanilla extract
  • 1/4 cup flour (for streusel)
  • 2 tablespoons sugar (for streusel)
  • 2 tablespoons cold butter (for streusel)
  • Chopped almonds (for streusel)

Instructions

  1. Preheat the oven to 350°F (175°C). Line a muffin tin with paper liners.
  2. Whisk together the all-purpose flour, almond flour, sugar, poppy seeds, baking powder, baking soda, and salt in a large bowl.
  3. Whisk together the buttermilk, vegetable oil, eggs, almond extract, and vanilla extract in another bowl.
  4. Pour the wet ingredients into the dry ingredients and gently mix with a spatula until just combined.
  5. Combine the flour, sugar, and cold butter in a small bowl for streusel and mix until crumbly. Stir in chopped almonds.
  6. Spoon the muffin batter into the prepared tin, filling each cup about 3/4 full. Sprinkle with streusel.
  7. Bake for 18-20 minutes or until a toothpick comes out clean. Allow to cool slightly.

Notes

These muffins freeze beautifully. Wrap each muffin individually to prevent freezer burn.
