- 1 cup all-purpose flour
- 1/2 cup almond flour
- 1/2 cup sugar
- 1/4 cup poppy seeds
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup buttermilk
- 1/4 cup vegetable oil
- 2 large eggs
- 1 teaspoon almond extract
- 1/2 teaspoon vanilla extract
- 1/4 cup flour (for streusel)
- 2 tablespoons sugar (for streusel)
- 2 tablespoons cold butter (for streusel)
- Chopped almonds (for streusel)
Instructions
- Preheat the oven to 350°F (175°C). Line a muffin tin with paper liners.
- Whisk together the all-purpose flour, almond flour, sugar, poppy seeds, baking powder, baking soda, and salt in a large bowl.
- Whisk together the buttermilk, vegetable oil, eggs, almond extract, and vanilla extract in another bowl.
- Pour the wet ingredients into the dry ingredients and gently mix with a spatula until just combined.
- Combine the flour, sugar, and cold butter in a small bowl for streusel and mix until crumbly. Stir in chopped almonds.
- Spoon the muffin batter into the prepared tin, filling each cup about 3/4 full. Sprinkle with streusel.
- Bake for 18-20 minutes or until a toothpick comes out clean. Allow to cool slightly.
Notes
These muffins freeze beautifully. Wrap each muffin individually to prevent freezer burn.
